FineReader allows me to open and edit PDFs, convert to Word, Excel and other formats.  There is the FineReader PDF OCR Editor which I use for turning hard copy paper back into editable files. And lastly the Screenshot reader which allows me to pull text out of screenshots.  This product allows me the functions of Adobe Acrobat, Omnipage, and Snagit all in one.

It digitizes  nearly any printed text you can scan with high accuracy in many languages, including multiple languages and can be taught to correctly identify any recurring mistakes including ligatures.   It uses a different colored font when it's not sure, facilitating correction and training.
